PRIORITY VIOLATIONS

No sanitizer available and lots of food had been cooked to supply buffet.  Shall provide sanitizer wiping cloth solution prior and during food prep. and cooking and use it.  *Corrected Today*

Cold prep table is holding foods at 45 degrees F.  Needs to be 41 degrees F or lower.

Dishwasher is not sanitizing.  Shall dip in 3-vat sanitizer after washing for 20 seconds and air dry until dishwasher is repaired.

Shall date mark all cooked foods in walkin cooler. *Corrected*

Scrape and clean grease buildup off of cookline handles and surrounding equipment.
