  • Sandwich prep cooler is holding foods at 42/43 *F Needs to be 41*F or lower at all times.
  • Shall date mark all cooked/prepared foods with a 7 day discharge date.
  • Clean grease build up on the wall behind cook line equipment.
  • Use paper towels to wipe sanitized tables or a fresh cloth each time.
  • Bags of food in dry storage area shall be on shelving.
  • Provide a thermometer in dessert refrigerator.
  • Ice scoop shall be stored handle up in ice bin.
