  • Raw meats stored above ice in walk in freezer. Store to prevent contamination.
  • Hamburgers in the hot display were 120*F. Needs to be 135*F or above at ALL times.
  • Brats & hot dogs on the roller were 112*F. Turned up now 155*F
  • Nacho cheese is at 120*F. Needs to be 135*F or above.
  • Provide wiping cloth solution at all things in the deli.
  • Provide a thermometer in the deli refrigerator.
  • Provide hot water in men’s  and ladies’ restroom hand sink.
  • Provide signage in men’s restroom for hand washing.
