  • Raw meats stored on top of ice in freezer. Store below and not touching ready to eat foods.
  • Sanitizer spray being used on food prep surfaces is 500/600ppm quat. *Shall be 200 to 400ppm.
  • Single service items stored on the floor of the storeroom shall be stored 6” above the floor.
  • Provide quat/chlorine test strips.
